Pepe Arguello started Finca Santa Cruz in 2019, he is a young coffee producer that has shown great aptitude to producing specialty coffee. He does all the right things at all the right times, showing in the cup that he is going to be at the top of his generation in quality and ability. Our Green Coffee Buyer has been buying from Pepe since 2020, and is excited to bring his coffee to Seattle Coffee Works. Pepe is a former Mexico Cup of Excellence winner for his Bourbon, Typica, Caturra, Gesha blend. This lot, named La Casona, is one of Pepe’s best ever! Pepe’s father is a well known coffee producer in Chiapas as well, so Pepe has been involved in coffee production since he was a baby. When he bought Finca Santa Cruz he dove headfirst into specialty coffee production. Community-wise, the local workforce is integral to success.
After the community helps harvest cherry, Pepe first floats the cherry in water then ferments for 20-72 hours in concrete tanks depending on outside factors like weather and ambient temperature, using pH as his guide. He then dries washed parchment on raised beds with mesh covering for 17-25 days. He uses a hydrometer to measure the level of moisture in the coffee during drying. His practices also help inform and grow education in the surrounding farmer population. He carries on the legacy of his father and his community while advancing with the technologies of the present, producing a truly stellar product.
